The cocoa trees are host to huge collections of extraordinary caterpillars that look like beards and thus gave the cocoa its name. The cocoa has notes of cocoa, pepper, tannins and cinnamon.

He is a chef by profession and thus discovered his love for high-quality food. On a trip to Nicaragua he was so enthusiastic about the cocoa and the way the locals harvest and ferment the cocoa beans that he decided to have cocoa beans produced according to his ideas. Today he develops the fermentation protocols and the drying for each cocoa variety based on his many years of experience.
