Classic Calissons from Provence are in the decorative metal box. This specialty from Provence is made from peeled almonds, candied melon pieces and natural sugar syrup. During the kneading process of this quasi-marzipan dough, bitter almond oil is added to give the Calissons their typical flavor. At Le Roy René, the classic recipe is enhanced with candied orange peel.

On top of the golden-yellow marzipan lozenges, a white layer of beaten egg white is spread, it is called "Glacage Royale", which means royal icing. Nothing works without this glaze. They are the hallmark of the traditional Calissons.
