But the differences are huge, because the cocoa content consists of different proportions of cocoa mass and cocoa butter, both the natural components of the cocoa bean. The mixing ratio of the two components remains the secret of the chocolatier.

As with  wine, the taste depends on the one hand on the type of cocoa (Criollo, Trinitario or Forastero and Arriba or Nacional), but on the other hand also on the nature of the soil where the cocoa grows.
