The pistachio tree
from the sumac family grows up to 12 meters high and can become 300 years old. The pistachio is one of the oldest cultivated plants in the world and originally comes from the Middle East. It is therefore not surprising that there are many dishes from the Orient with the popular light green seed of the plant. The salted pistachio with shell, which is known as a snack, is the actual seed of the plant.
It is, botanically speaking, a stone fruit. About a month before harvesting, the shell bursts open on the side. In Iran, the pistachio is therefore called "laughing pistachio". After harvesting, the pulp is first removed. Then the fruits are put into a water bath, in which the fruits with kernel sink to the bottom and the empty fruits float on the surface. These are sorted out for composting.
Pistachios: Green color promises best quality
In the next step, the nuts are dried to below 6% moisture content. The kernel, which is inside the shell, is surrounded by a seed skin. The skin is reddish brown in color and surrounds the yellowish or greenish kernel. The quality is good when the kernel has a green color.
In Europe, the pistachios from Sicily are famous for their top quality: the Pistacchio di Bronté DOP. Their color and especially their taste are unique and have helped it to get the name "Green Gold". They are traditionally harvested by hand.
