Colombia 70% Betulia B6 Pure Criollo - dark chocolate

This dark chocolate Colombia 70% Betulia B6 Pure Criollo is a bean-to-bar chocolate made from pure Criollo Cacao. The cocoa beans come from the Hacienda Betulia in Colombia and are named B6.

The Hacienda Betulia is located in the Maceo region in Colombia, east of the provincial capital Medellin. It was founded by cousins Christian Velez and Juan Pablo. For years the two have worked to develop a Colombian criollo with rare and complex flavors. The hacienda houses a rain forest reserve on approx. 30 hectares of land. The jungle is untouched and protects native animals from birds and insects to small mammals. The land that was exploited for years is gradually being protected again because environmental awareness is growing in Colombia.

Three types of Criollo cocoa grow on the farm. The cocoa B6 used for this chocolate has aromas of chocolate cake, raisins, plums, mocha and tobacco. The color is so light that the chocolate has the color of milk chocolate .

Kay Keusen from Taucherli Schokolade turns it into this wonderfully creamy, dark chocolate. The cocoa beans are processed by him in Zurich. It uses the following parameters:

• Roast for 20 minutes

• Conching time 24 hours

• Vintage 2018
