Dark Stone Ground Chocolate 70% mit Chipotle Chili

In the Chipotle chili 70% chocolate the cocoa from the Dominican Republic is first ground alone and then again together with the sugar and the smoked and dried chilli peppers. Chipotle chilli is very popular in the USA and is often used in Tex-Mex cuisine. Jalapenos are not very hot, but give in contrast to the sugar in chocolate, it has a distinctive taste.

At Taza Chocolate , the organic cocoa is ground on original Mexican granite stone mills instead of in the conche. The stone is of course coarse-pored, which means that the cocoa is not ground very finely. In this way, cocoa was made before over thousend Years in Mexico processed and then cooked with it.
