The origin chocolate is made by Duffys Chocolate in an artisanal way in his manufactory in Lincolnshire. Duffy's makes Bean-To-Bar chocolate, which means that he has the whole process from the bean to the bar in his hands. He can greatly influence the taste and consistency of the chocolate himself in this way. The chocolate is stone ground, so it is not as fine as one whose cocoa beans have been ground in a conventional conche. In this way, the English chocolate has a somewhat coarser, slightly pebbly consistency.
