The taste of this Chocolate reminds us of toasted marshmallow, whole wheat cookies and honey and tastes more like a dessert like a Chocolate, yet not sweet.

Goodnow Farms is the very first chocolate manufacturer to receive cocoa beans from the recently launched project between Impulsa Bacao and FUNRED Agro in the Boyaca region of Colombia. This local association of cacao farmers was created to help cacao producing families in the region generate profits from cacao and create a positive social and environmental impact. a new fermentation and drying facility was built in the town of San Pablo de Borbur. There, technical assistance is being provided to help farmers identify genetic cocoa varieties and realize the potential of fine cocoa. In this way, cocoa can develop into a significant source of income. Cocoa farmers invest a lot of time in improving their cocoa varieties and yields.  Many plant new trees to more quickly increase the amount of fine cocoa they can produce each season.

During the harvest season, the freshly harvested, moist cocoa beans are picked up daily to be taken to the fermentation facility. There, the beans are fermented according to a specially developed protocol and carefully monitored. The beans are then dried in a covered drying room. The entire process is overseen by Alejandro Vargas and William Bonilla under the supervision of General Manager Anyi Gonzalez Torres, all of whom are from San Pablo de Borbur.
