Carob tree honey from Crete

natural

This honey is produced sustainably in Crete. The bees are specially transported to the trees during the short flowering period in October so that they can fly to them. There are few natural stands of carob trees in Europe. However, the processing is very complex. The honey is harvested gently so that the bees are not stressed or need to be fed sugar.

The honeycombs are spun by hand and the honey is not heated. This keeps the honey's valuable enzymes and other ingredients intact. As a result, it can sometimes crystallize  and have a firmer consistency. This is normal and a sign that the honey is completely natural, valuable and alive. 

The honey has intense, tart aromas and a complex flavor. Deligreece describes the taste as follows: Walnut, Caramel, Chocolate, Deep, Rustic, Bark.
