Kinako - Japanese milk chocolate with roasted soybean powder

Typical Japanese style chocolate

Kinako is made from 100% roasted soybeans and is a traditional ingredient in Japanese confectionery (Wagashi, Mochi etc.). But it wasn't until 2018 that the first Japanese chocolatier used the Kinako in combination with chocolate. Kinako is ground and is used here as a sprinkle. Kinako leaves a very fine, crumbly, slightly nutty impression on the tongue and goes well with the pure cocoa taste that stays in the mouth for a long time.

This milk chocolate with 50% cocoa content has much more cocoa than is usual for milk chocolate and is therefore much less sweet than other whole milk chocolates. It has flavors of nuts, malt, cocoa and caramel .

The cocoa beans come from the Dominican Republic and are produced entirely according to organic standards; however not currently certified, but are 100% Fairtrade certified.

The chocolate is made in Germany by Edelmond from Luckau, based on Japanese recipes by Kevin Lühmann, chocolate sommelier from Hanover.
