In the Canoabo region, in the state of Carabobo on the Caribbean coast of northern Venezuela, the soil is very fertile and there is a high density of Criollo-cocoa beans. These beans are rich in sugar, which is essential for the fermentation process that lasts at least six days. These Criollo beans are characterized by full-bodied aromas of fruit and cocoa.
