Peru 100% cocoa

This sugar-free chocolate is made from the organic cocoa beans Gran Nativo Blanco Ultra Premium from Peru. These rare cocoa beans are special because they have a high criollo content. They were rediscovered in 2008 in Alto Piura in northern Peru. The Norandino cooperative selected the best trees and grew this old cocoa variety again. The cocoa pods are only harvested when fully ripe and fermented in a central fermentation station for about six days and turned daily. They are carefully air dried.
