Organic Couverture Piura 75% dark chocolate

The dark organic chocolate Piura Porcelana is made from an extremely rare white cocoa bean and comes from the Piura river valley in the Peruvian Andes. Discovered in 2007, chocolate is now one of the most expensive cocoa varieties in the world thanks to its lively fruity notes.
Tip: particularly ideal as a couverture e.g. B. for mousse au chocolat !

The place La Quemazon is about 200m high, in the hills at the foot of a mountain range that is over 2000m high and is called Sierra Piura. Like an island, it is surrounded by two arms of the river. The farmers of La Quemazon produce one of the rarest and finest cocoa varieties in Peru and around the world. It is called "Porcelana" because the beans are white. Porcelana cocoa belongs to the "criollo" family of beans, which are represented on the world market with no more than 5%. So far, this strain, famous for its vibrant fruity flavors, has only been found in Venezuela and Mexico.  

History: Francisco Pizarro founded the third Spanish branch in South America and the first city in Peru in 1532 and named it San Miguel de Piura. Today the entire region is called Piura. Coming from the hot coastal plains, in the cooler areas of the Andes, the traveler encounters villages made up of simple mud huts where farmers and their families live.
