The creamy and golden spring honey is collected at the end of April on the Bavarian orchards in the Hersbrucker Alb. Orchard meadows are characterized by their irregularly distributed tall fruit trees of various types and ages. This creates a varied landscape for the bees, which guarantees a fruity note from the honey. For the harvest of spring honey, beekeepers must have strong bee colonies, since weak bee colonies need the honey completely for their own rearing. A cold and long spring also reduces the harvest of the mild blossom honey.
Up to 80% of honey consists of sugar. The largest proportions are fructose and glucose. The consistency of the honey is determined by this fructose-glucose ratio. Glucose crystallizes faster, so that a high proportion of glucose gives the honey a creamy to firm consistency. With a higher fructose content, the honey is more liquid.
