Lisi Montoya refined this dark chocolate with the salt of the Incas . The salt pans of Maras are located in the south of central Peru in the province of Urubamba in the region of Cusco at over 3,300 m in the Andes. It is the highest saltworks in the world. The Incas already harvested salt here. The work hasn't changed in 500 years. The salt basins are nourished from a spring in the mountains. After cleaning the basin, it is filled with water about 5cm high. In the hot sun, the water evaporates quickly, leaving behind the famous salt flowers , which in France are called fleur de sel. The salt of Maras is characterized by its light rose color.

The chocolate is made from one of the most aromatic cocoa varieties in the world: Chuncho cocoa . It also grows in this region and is one of the best cocoa in the world.
