The orange / salt combination is a classic in the chocolate world. To'ak and Charles x Michel have created this flavor using ingredients from the Galapagos Islands. They used an old Italian processing method: candied fruit, in which the peel of the oranges is preserved with sugar. The candied oranges are cut into small cubes, individually coated with cocoa butter and then dipped in Chocolate with salt crystals.
