The indigenous communities of the Amazon rainforest have been preparing tucupi for thousands of years. They use fermented manioc starch and chillies, which are cooked over a wood fire in a lengthy process. The flavor of tucupi is rich, spicy and smoky with a pleasant umami note. It is an important seasoning used in many cuisines.

With Tucupi, we want to give recognition to a relatively unknown spice that produces an unexpected symphony of flavors.
