White chocolate defined
Because although evil tongues claim that white chocolate is not really chocolate, it is always very popular. Of course, it can be argued whether it is actually still chocolate, since it no longer contains cocoa mass, but consists exclusively of cocoa butter, milk and sugar. So there are no dark cocoa components in white chocolate , only cocoa butter, the cocoa content in artisanal chocolate is around 30 percent. Since cocoa butter is a component of cocoa, this variant is definitely part of the chocolate enjoyment!
White chocolate is legally regulated in Europe and the USA. It must contain at least 20% cocoa butter and at least 14% milk powder. The difference to 100% is made up with sugar. Industrial chocolate will just meet these requirements with a lot of sugar, because it is cheap, plus flavoring ingredients if necessary, as well as everything from corn syrup to soy lecithin. The proportion of sugar will always be many times higher than that of artisanal white chocolate. Our advice: Read the list of ingredients carefully.
The cocoa bean consists (depending on the variety and type) of 48-57% cocoa butter and 43-52% cocoa mass. This cocoa bean is pressed and this is how the cocoa butter separates from the cocoa mass. The cocoa butter is responsible for the delicate melt and white chocolate also melts wonderfully in the mouth if it has been well conched and processed. It's pretty filling, and that's why you can't gobble it up in one. And as with all good, artisanal chocolates, you don't need a lot to enjoy them.
